Heyo friends. Just popping in quickly with a little recap from the past 24 hours. Today’s been a busy day of working out, as well as running errands, and I’ve finally been able to chill out in the sun for the past hour or so 🙂
When I got home from squash last night I was super hungry, but strangely enough, I felt like taking the time and effort to make a good, solid dinner. Sometimes when I am famished after a workout, I’ll eat a random assortment of (usually) healthy things, and although it’s substantial, it never looks like a visually appealing meal. Sometimes I even eat it standing up at the counter!
Last night, however, that was not the case, and I made myself breaded chicken breasts seasoned with a little salt and pepper, brussels sprouts, broccoli, and tomato/mozzarella/avocado with balsamic.
The highlight of this meal was the chicken. I had made another serving exactly like this one, and ended up eating it a little later (as a snack…?). Chicken as a post-dinner snack- maybe not normal, but that’s how I roll.
Before going to bed last night, I quickly prepped my breakfast, by combining some steel cut oats, Anita’s breakfast boost, and water, and putting them in the fridge. This morning when I opened up the container, I was happy to see that the chia seeds from the breakfast boost mix had expanded to make the oat mixture more pudding-like and chewy!
Before microwaving my oats I mixed in a scoop of Bodylogix vanilla protein powder, and afterwards I added a little bit of dark chocolate and some peanut butter!
I brought Nabilla to my standard 9:30 am class at Unite this morning, and was, as per usual, sufficiently sweaty by the end.
We headed to Trader Joe’s afterwards to pick up a couple of necessary food items. I was too hungry to walk all the way home before eating, so I stopped at a bench nearby the store and ate some of my recent purchases 🙂
Yes, that is yet another peanut butter jar. Trader Joe’s is so freakin’ good at marketing their products, I tell you. Either that or I have no willpower, I don’t know. (I’d like to think it’s the first one).
But in my defines, this peanut butter had flax and chia seeds mixed in, to make it super crunchy and plenty of Omega-3’s!
Also, frozen mango. I could live off this fruit.
Hope you’re having a great weekend!
